Healthy Collagen Paleo Pancakes
This delicious recipe serves one, double up if you are making it for two people. Bananas are a great source of potassium and eggs are a great source of B vitamins, adding in clean collagen powder gives an amino acid boost.

Ingredients
For the Pancake

Banana
The riper the sweeter!

Collagen Powder

tbsp
Coconut Oil
For cooking
For the Topping

Greek yogurt
Can use low fat

Liquid Stevia
to taste

Crunchy Peanut Butter

Instructions
Whisk the eggs in a bowl and mash in the banana, combine until desired consistency is aquired.
Stir in the collagen powder
Heat up a frying pan or skillet with a tablespoon of coconut oil
Pour in the mixture, turn down to moderate heat and cook for 3 - 4 minutes.
Once browned flip the pancake with a large flipper spatula
Mix the yogurt with liquid stevia and peanut butter and throw on toppings of choice & serve whilst warm!
