Healthy Collagen Paleo Pancakes
Pancakes every day!
On a recent health kick journey, I wanted to eat my favourite breakfast; pancakes. However, wanted something gluten-free and healthy, a go-to recipe that could be eaten often with health benefits. I stumbled across paleo pancake recipes online and hit the jackpot! Collagen Paleo Pancakes! This also meant no flour alternatives or sugar. The bananas added so much sweetness it was a treat!
Collagen
To make Collagen Paleo Pancakes I adapted the pancakes to include collagen powder and this can be omitted. Collagen is the most abundant protein in our bodies. Common knowledge of collagen is that it gives our skin strength and elasticity. But collagen is also in our muscles, bones, skin, blood vessels, digestive system, and tendons. The most abundant amino acids found in Collagen are Proline, Glycine, Glutamine and Arginine which support gut repair.
Medium-chained fatty acid
I found that cooking with coconut oil retained the sweetness and added medium-chained fatty acid (MCFA) for an additional gut-loving health boost.
Greek yogurt
Layering lashing of Greek yogurt sweetened with stevia reminded me of whipped cream, and adding crunchy peanut butter added a wonderful deeper layer of flavour. Peanut butter is highly satiating and this dish will keep you satisfied until your next main meal. Greek yogurt contains calcium, magnesium, and phosphorus as well as being beneficial for your gut microbiome.

Healthy Collagen Paleo Pancakes
Equipment
- Frying Pan
- Bowl
- Fork
Ingredients
For the Pancake
- 1 medium Banana The riper the sweeter!
- 2 medium Eggs
- 1 tbsp Collagen Powder
- 1 tbsp Coconut Oil For cooking
For the Topping
- 2 tbsp Greek yogurt Can use low fat
- 2 drops Liquid Stevia to taste
- 1 tbsp Crunchy Peanut Butter Optional
Instructions
- Whisk the eggs in a bowl and mash in the banana, combine until desired consistency is aquired.
- Stir in the collagen powder
- Heat up a frying pan or skillet with a tablespoon of coconut oil
- Pour in the mixture, turn down to moderate heat and cook for 3 – 4 minutes.
- Once browned flip the pancake with a large flipper spatula
- Mix the yogurt with liquid stevia and peanut butter and throw on toppings of choice & serve whilst warm!
